This recipe is one of my favorites! Every one who has tried the Greek Yogurt Chicken recipe agrees that it is one of the best on the site. I could literally eat pounds of this stuff every day. If you think food has to taste bad to be healthy for you, or if you think dieting means eating cardboard for every meal, you will love this. It has a creamy texture, is full of protein, and will keep you full and satisfied.
3 lbs thin chicken breasts (I recommend using the thin breasts or hammering the regular breasts down to about an inch thickness)
1 cup Greek yogurt (I recommend the full fat kind. It gives it a great, creamy texture that you won’t get from the fat free kind and doesn’t add that much in the way of extra calories or fat)
1/2 cup grated parmesan cheese (8 tbsp)
2 tsp garlic powder
2 tsp seasoning salt (we used Lawry’s low sodium)
1 tsp black pepper
Preheat oven to 375 degrees. Place chicken breasts in a greased pan. Mix all other ingredients together. Spread the topping over the chicken breasts evenly. Bake for 45 minutes.
